- 125 g liszt
- 65 g kissé puha vaj, kockákra vágva
- 1 teáskanál mézeskalács fűszerkeverék
- 1 teáskanál fahéj
- egy csipet só
- 1/4 teáskanál szódabikarbóna
- 1 kisebb tojás sárgája
- 75 g barnacukor
- 1 evőkanál fekete nádcukor szirup
- 1 1/2 evőkanál nádcukor szirup vagy méz
- 1 citrom héja
A krémhez:
- 20 g puha vaj
- 40 g porcukor
- 1/2 teáskanál vanília
- 1-2 evőkanál tej
ELKÉSZÍTÉS:
1. A lisztet, a fűszereket, és a szódabikarbónát átszitáljuk, majd a vajjal összemorzsoljuk az ujjaink vagy egy késes betétű konyhai robotgép segítségével, ameddig a vaj el nem oszlik a lisztben.
4. Ameddig a tészta a hűtőben van elkészítjük a sapkát és a sálat. A sálhoz a piros marcipánból egy hosszú hengert formázunk, majd ellapítjuk, egyenesre vágjuk a széleit, majd a végeit bevágjuk. A sapkához fehér marcipánból készítsünk egy kis gömböt, egy kört, és a piros marcipánból pedig egy kúpot, tegyük egymásra őket, és az ujjainkkal nyomkodjuk össze. Tegyük kicsit félre, hogy picit száradhassanak.
5. A sütőt 180 fokra előmelegítjük, és egy tepsit kibélelünk sütőpapírral.
6. A tésztát kivesszük a hűtőből, 4 mm-re nyújtjuk, kivágjuk belőle a formákat és külön füleket is formázunk, amiket sütés előtt a kutyusokra teszünk. Fontos, hogy ha össze akarjátok őket ragasztani akkor ne tegyetek mindre fület, vagy a süti másik oldalára tegyétek.
7.A sütiket 10 percig sütjük, vagy ameddig a szélei aranybarnák nem lesznek. Lehetőleg rácson hagyjuk őket kihűlni.
8. Ameddig a sütik hűlnek, elkészítjük a krémet. A vajat és a cukrot összekeverjük, majd hozzáadjuk a vaníliát, és annyi tejet, hogy krémes állagú legyen.
9. Amikor a kekszek kihűltek, illesszük őket össze a krémmel, díszítsük ki, és tegyük rá a sálat és a sapkát. Ekkor még díszíthetjük a sálat különböző cukrokkal.
- 1 cup of flour
- 6 tablespoons of slightly softened butter, cut into cubes
- 1 teaspoon of gingerbread spice mix
- 1/2 teaspoon of cinnamon
- a pinch of salt
- 1/4 teaspoon baking soda
- 1 small egg yolk
- 1/4 cup and 2 tablespoons of brown sugar
- 1 tablespoon of black treacle
- 1 1/2 tablespoons of golden syrup or honey
- zest of 1 lemon
- 1 1/2 tablespoons of softened butter
- 5 tablespoons of powdered sugar
- 1/2 teaspoon of vanilla extract
- 1-2 tablespoons of milk
METHOD:
1. To make the gingerbread sift the flour, spices, and baking soda in a bowl, then add the butter, and mix it with your fingers or with a food processor until the butter is distributed well in the flour.
2. Add the black treacle, golden syrup, egg yolk, lemon zest, salt, and sugar, and mix until a sticky dough comes together.
3. Dump it on a floured surface, and form a ball from the dough. Place it in the fridge to rest for an hour.
4. Make the decorations while the dough is in the fridge. For the scarf simply form a long rope from the red marzipan, then flatten is, cut off the edges so it’s straight, then cut little fringes to the ends. To make the hat form a disk and a little ball from the white marzipan, and a cone shape from the red one. Put it together, then press it with your finger, so it’s blends together. Make sure you let it dry for a few minutes.
5. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a baking sheet with parchment paper.
6. When the dough is chilled, roll it out to about 4 mm thickness, with a cookie cutter cut the dogs out, then from the remaining dough make little ears and put it on the dogs before baking them. If you put frosting between two cookies, make sure you only put ears to every other cookie, or put ears on the opposite side of every other cookie.
7. Bake the cookies for about 10 minutes, or until the edges are browned. Let them cool on a cooling rack.
8. While the cookies are cooling, make the frosting. Mix together the flour and butter, add the vanilla, and enough milk to get a creamy frosting consistency.
9. When the cookies are cooled, frost every other one, then press another cookie on the frosted ones. Decorate it with frosting or royal icing, then put the scarf and hat on.
